The Colli Altotiberini Doc takes its name from the hilly area run though by the river Tiber, in the districts of Citerna, Città di Castello, Gubbio, Monte Santa Maria Tiberina, Perugia, San Giustino and Umbertide, all in the province of Perugia.
This Doc includes three types of wines: Colli Altotiberini Bianco, Rosso, and Rosato.
The Bianco is served with delicate fish-based dishes, pasta dishes served with fish sauce, fried lake fish and is served at a temperature of 10-12°C in flared chalices.
The Rosso is served with fresh cold cuts, pasta dishes with tomato sauce, frilled or roasted meat, poultry, fresh vaccine cheese, and is served in elongated chalices at 16-18°C.
The Rosato is associated with tasty hors d'oeuvres, herbal risottos, spicy fish soup, eel, and is served in wide chalices at 12-14°C.
